Honey Grilled Chicken with Pear Salsa

We love to cook with fresh, local, in-season produce! Shopping in-season ensures we are eating the very best ingredients available and it keeps us from getting in a food rut because we are always switching up the ingredients, textures and flavors.
This time of year it is all about apples, pumpkins, squash and pears. Tonight we are cooking up our honey grilled chicken topped with fresh pear salsa. The pears looked so delicious we kept this one raw & really simple! Just chop up your pears, red onion & jalapeno and season with lime juice & fresh cilantro. This would be delicious served up as is on game day for a healthy twist on the typical salsa but tonight we are using it as a topping for our honey chicken.

Ingredients
1 pound thinly sliced chicken breast
1 tbsp honey
1 tsp extra virgin olive oil
3 pears diced
Juice of 1 lime
1/4 red onion chopped
1/2 jalapeno (seeds removed!)
Small handful of cilantro
Salt & Pepper
Let's get cooking!
1. Heat grill pan to medium high heat and add your olive oil. Season chicken with salt & pepper and brush honey on chicken to coat.
2. Cook chicken for 4-5 minutes on each side until cooked through.
3. While chicken is grilling, dice pears, red onion and jalapeno. Stir in lime juice and finely chopped cilantro to combine.
4. Plate up chicken and top with 1/4 of the pear salsa.
Makes 4 healthy portions!
