Stuffed Caprese Chicken

Are you as caprese obsessed as we are?? Tonight we are stuffing our chicken with our favorite fresh and healthy 6 ingredients! This is a super easy and inexpensive meal to throw together, talk about a win win ;)
We simply butterfly our chicken breasts and stuff in the typical caprese ingredients. We used fresh basil, lots of yummy garlic, grape tomatoes, and reduced fat mozzarella cheese. We, of course, added in an extra veggie for added nutrition and thought sautéed spinach would be the perfect addition!
YUM, this was such a delicious combination of flavors! We simply sautéed the outside of our chicken in a pan and then tossed the entire pan into the oven to cook to a juicy perfection. Ready for another perk of this chicken dish? This whole dinner comes together in one pan! Talk about an easy clean up ;)

Ingredients
1 pound lean chicken breast - 1 breast per serving
4 cups raw spinach
4 garlic cloves minced
1 handful fresh basil
1 cup grape tomatoes halved
4 tbsp. reduced fat mozzarella cheese
1 lemon
1 tbsp. olive oil
non-stick olive oil spray
Pepper
Let's get cooking!
1. Preheat oven to 350 degrees
2. Add non-stick spray to sauté pan and add half of garlic and fresh spinach. Cook for 2 minutes or until wilted, remove spinach from pan and set aside.
3. Butterfly chicken breasts by slicing chicken breasts lengthwise. Open breast up like a butterfly and stuff with 1/4 of the ingredients. Add spinach, garlic, basil, tomatoes and one tbsp. mozzarella cheese to each breast. Fold chicken breast back together.
4. Add one tbsp. olive oil and non-stick spray to same sauté pan used for spinach. Place stuffed chicken breast into pan and sauté each side for 2 minutes. Season both sides of chicken with lots of fresh pepper. Squeeze the juice from lemon over chicken as you are cooking.
5. Pop the entire pan into the oven and cook for an additional 12 minutes or until chicken is cooked throughout. Chicken should be moist and white throughout.
Serves 4 healthy portions! Enjoy :)
