Cherry Balsamic Chicken

One of our favorite things to create are fresh and delicious dinners that are packed with both fruits and veggies. Well, this one takes the cake on that! Not only is this super healthy, but it's so good the hubs ask for it on a regular basis. Yes, he is a steak and potatoes man and asks for cherry chicken over butternut mashed potatoes! Who knew ;)
Above is our delicious and fragrant cherry balsamic puree. This would also make for a wonderful salad dressing if you would like to go that route! The puree is made from pitted cherries, balsamic vinegar, olive oil, fresh garlic, honey mustard and fresh cilantro. We marinated our chicken in this yummy goodness and then cooked it up with a combination of red onion, even more garlic, asparagus and spinach. See we told this dish was veggie packed ;)
We put this dish together over our butternut mash, which just so happens to be our new favorite way to eat mashed potatoes. They are so freaking good you really have to try these to understand why we are raving about them!
We love the cherry balsamic over the buttery mash, it was a really nice combination of flavors. Without the mash we are talking only 235 calories and butternut mash included we are only at 349! Not too shabby huh..

Ingredients
1 pound lean chicken breast
2 cups pitted cherries
1/4 cup balsamic vinegar
1 tbsp olive oil
3 garlic cloves minced
1 tbsp dijon mustard
1 small handful cilantro chopped
1 small red onion chopped
4 cups fresh spinach
2 cups asparagus chopped
1 cup sodium free chicken stock
Let's get cooking!
1. Add cherries, balsamic, olive oil, 1 garlic clove, dijon mustard, and cilantro to food processor/blender and blend until smooth. Marinate chicken for 15 minutes in puree
2. Add chicken and half of sauce into saute pan over medium heat with red onion and remaining garlic. Saute chicken for 2 minutes on each side to brown. Add remaining puree and simmer for 3 minutes to combine flavors. Add chicken stock,stir, and simmer for an additional 3 minutes. Add asparagus and spinach to pan and cook for approx 3 minutes or until asparagus is tender
3. Serve this over butternut mash if desired!
