Apple & Onion Quesadilla

What are your FAV Fall traditions? Apple picking has always been big with our families! This is something we did as kids and now are continuing the fun with our own kiddies ;)
The little babes recently had his first adventure in picking and this little tradition lead to a LOT of apples, which in turn lead to a LOT of apple recipes!
Enter the BEST QUESADILLA RECIPE EVER... (& our go-to lunch these days)
This is our go-to for many reasons. Absolute deliciousness being the first. Simplicity being the second. This is simply made up of caramelized apple and onion and finished off with cheddar cheese. It's that easy!

Ingredients
1 Ezekiel tortilla
1/2 apple
1/2 onion
2 tbsp. cheddar cheese
1/2 tbsp. olive oil
Let's get cooking!
1. Thinly slice apple and onion.
2. Add 1/2 of oil to pan over medium heat. Add apple and onion and cook approx. 3-5 minutes or until golden brown and begins to caramelize. Remove from heat.
3. Stuff tortilla with apples, onions and cheddar and fold in half.
4. Add remaining oil to pan and cook folded tortilla 1 minute per side to brown the shell and melt cheese.
