Basil Pesto Chicken Parm

We absolutely LOVE chicken parmesan. Tonight we are putting a super quick and easy spin on this oh-so popular dish! What's better than healthy food in under 30 minutes? Get ready to fool the whole family into thinking you were cooking for hours, because yes, it's that good!
Ok ready for the simplicity in this dish? This whole dish consists of only pesto, chicken and mozzarella cheese! Simply whip up a quick basil pesto which consists of throwing tons of fresh basil, pine nuts, garlic, lemon juice, parmesan cheese and olive oil into the food processor and blending until smooth. Make this even easier by buying a jar of premade pesto, that's your call ;)!
Simply coat your organic chicken breasts in the pesto, top with mozzarella cheese and bake in the oven until bubbly and brown! Yes, that's it! We told you this was a good one!
Yum, this was delicious. We placed our chicken over a trio of sautéed kale, spinach and asparagus. You should know by know we love veggies and eat as many GREENS as we can possibly fit into our bodies!

Ingredients
1 pound organic lean chicken breast
4 tbsp. organic mozzarella cheese
1 lemon
3 garlic cloves
1/4 cup pine nuts
1/4 cup organic parmesan cheese
1 large handful basil
3 tbsp. olive oil
Salt and pepper to taste
*buy organic when you can*
*cheat and buy a jar of basil pesto to save time just be sure to read the label*
Let's get cooking!
1. Preheat oven to 350 degrees
2. Add nuts, olive oil, parmesan cheese, basil, garlic and juice of lemon to food processor and blend until smooth. Salt and pepper to taste.
3. Line bottom of baking dish with small amount of pesto. Coat chicken breasts in remaining pesto.
4. Top each breast with one tbsp. mozzarella cheese.
5. Bake for 20 minutes, flipping halfway through, or until chicken is white throughout.
