Baby Beets & Fennel Citrus Salad

From our skinny table to yours...

We just recently added a new vegetable into our diet and our loving every beety bite!  Not only are beets delicious, they have wonderful health benefits as well!  Beets are loaded with antioxidants and are even shown to have anti-inflammatory and detoxification effects!  If you haven't yet bought your first bunch, now is the time to try!  

 
 
This is a super easy salad to whip together.  We start by sautéing our baby beets in olive oil.  We then add fennel to the pan!  Fennel will bring this delicate licorice taste to the table that is to die for!  Remove this combo from the heat and top with fresh pomegranate seeds and orange slices!
 
We topped our salad off with a light vinaigrette of 3 parts orange juice to 1 part olive oil for the perfect citrusy dressing.  It's so important to eat olive oil in the raw so we make a point to make our own dressings.  Grab a mason jar, pour olive oil, orange juice, spices and SHAKE, SHAKE, SHAKE!  Easy right?

Ingredients Salad
4 organic baby beets sliced
1 organic fennel bulb sliced
4 tbsp. pomegranate seeds
1 orange chopped
1 tbsp. olive oil
 
Citrus Vinagrette
1 tbsp. olive oil
3 tbsp. orange juice
1 tsp. orange zest
1 tbsp. honey mustard
1 sprinkle garlic powder
1 sprinkle onion powder
Salt & Pepper to taste
 
Let's get cooking!
1.  Add 1 tbsp. olive oil to sauté pan over medium heat.  Add sliced baby beets and sauté for 10 minutes or under slightly tender.  Add fennel to pan and continue to cook for additional 10 minutes.
2.  Remove from heat and top with pomegranate seeds and chopped oranges. 
3.  For dressing mix or blend remaining olive oil, orange juice, zest, honey mustard, garlic powder and onion powder.  Season with salt and pepper to taste.
4.  Pour dressing over salad and enjoy!
