Blackberry Chipotle Chicken Chili

How have we not thought about this before? We always add fruit to our summer gazpacho, so why not add fruit to our fall chili? Well it finally hit us and boy were our taste buds happy! It's that sweet and spicy combination of flavors that just does it for us.
Chili has certainly become a staple in our homes in the fall/winter. This one pot wonder dish is super simple to make. We always throw in our basic ingredients of lean organic protein, peppers, onions, cumin, and chili powder and then let our imaginations run wild.
Today we opted for a jar of mango and habanero salsa, an avocado and 2 cups of fresh blackberries! Get creative with your pot of chili, just to sure to sneak in a bunch of veggies ;)

Ingredients
1 pound organic lean
ground chicken (or 1 cup dry quinoa for vegetarian variety)
1 onion
chopped
2 peppers chopped (we used 1 orange, 1 yellow)
4 garlic cloves minced

1 jar mango & habanero salsa
3 cups chicken stock
1 can black beans (rinse to remove any excess sodium!)
1 cup butternut squash chopped (or sweet potato)

1 cup frozen organic corn
2 cups blackberries
2 tbsp. cumin
2 tbsp. chili powder
2 tbsp. whole wheat flour
1 handful cilantro

1 tbsp. olive oil
Let's get cooking!
1. Add one tbsp. olive oil to pot. Add onion, peppers, garlic, jalapeno and butternut squash and sauté until lightly browned. Add ground chicken and cook until browned. Add cumin, chili powder and mash in the avocado.
2. Add black beans, frozen corn, jar of salsa and whole wheat flour.
3. Add chicken stock and chopped blackberries (leave a few to chop for garnish)
4. Stir in most of the cilantro and squeeze in juice from one lime
5. Simmer for at least 30 minutes to allow flavors to combine
6. Top bowl with blackberries and cilantro.
Serves 6 healthy portions! Enjoy :)

Now that's an interesting combination that I would have never thought to do. Hopefully we will be getting some chili type weather in the near future so that I can start making chili, stews etc. Yum.
