Hot Turkey Sausage, Sweet Potatoes, Red Peppers & Onions

When you think about the typical sausage, peppers and onions sammie you probably think calories, fat and grease galore. At least we do! Well this happens to be a typical sandwich craving of the hubs and we have to satisfy our hungry men ;) So we came up with a solution to please the hubbies taste buds while still keeping our waistlines slim and trim!
Not only is this super delicious, but this is a super simple meal to throw together. The total prep time to this meal in under ten minutes! Simply slice up sweet potatoes, red peppers, sweet onions, garlic and parsley and toss them in a baking dish with one tbsp olive oil. Slice up the hot turkey sausage and lightly brown the outside. Add the sausage to the pan and let the oven do the work for you! Now would be the perfect time to get in a quick workout!
Yum! This is such a tasty sandwich and doesn't seem to qualify as health food. The beauty in this one is that you're going to think its a 'cheat' night, but this is actually a nutritious meal. Stuff this deliciousness in a whole wheat pita to keep the calories low while still satisfying your sandwich craving. Serve this with a veggie of your choice alongside and you have yourself a delicious and nutritious supper for under 500 calories! Serves: 4
Serving size: 1/2 whole wheat pita
Calories: 416
Fat: 18.5 grams
Carbs: 45.4 grams
Dietary fiber: 6.9 grams

Ingredients
1 pound lean hot turkey sausage
2 sweet potatoes
2 red peppers
2 sweet onions
3 garlic cloves minced
1 handful fresh parsley chopped
2 tbsp olive oil
2 whole wheat pitas cut in half (our pita was 140 calories)
Let's get cooking!
1. Preheat oven to 400 degrees
2. Slice up peppers and onions. Chop sweet potatoes into bite size pieces. Add veggies, garlic and chopped parsley to baking dish. Mix in one tbsp olive oil
3. Chop up sausage and saute in pan with 1/2 tbsp olive oil until outside is golden brown, approx 2 minutes per side. When browned add the sausage to the pan. Mix around to combine flavors. Add remaining 1/2 tbsp olive oil to baking dish
4. Bake in oven for approx one hour, mix contents around every 20 minutes
5. Load up 1/2 pita per person and enjoy
