Chili Pork & Tomato Corn Salsa Burritos

Chicken breast is typically our go-to lean protein but tonight we're switching things up with the other white meat, pork! Boneless pork chops are high in protein and surprisingly low in fat and a great healthy alternative to those of us stuck in a chicken rut.

Ingredients
1 pound boneless pork chops
4 whole wheat wraps (100 calorie wraps)
1 tsp cumin
1 tsp chili powder
1/2 tsp cayenne powder
1 tbsp extra virgin olive oil
4 vine ripe tomatoes
1 cup corn
1/4 red onion diced
3 garlic cloves minced
2 limes
1 avocado sliced
1 bunch cilantro
Let's Get Cooking!
1. Trim away any visible fat from chops. Season pork with cumin, chili powder, cayenne and the juice of half a lime.
2. Heat grill pan to medium high heat and add olive oil to pan. Grill chops for 7-8 minutes on each side until cooked through. Remove from pan and dice into bit sized pieces.
3. Add corn to pan and grill for 2 minutes until charred.
4. To make salsa, dice tomatoes, finely chop red onion and mince garlic. Add corn to tomato mixture and stir to combine. Mix in your finely chopped cilantro and squeeze in the juice of half a lime.
5. Stuff each wrap with 1/4 of your pork, add in fresh salsa and top with 3 avocado slices. Serve with a fresh lime wedge & enjoy!

DeleteYum!!! I always love tacos and salsa as it gets warm! :) I also have to add corn to every mexican recipe I make for some reason so I know this is something I'd love!

I love burritos. Complete package it is. It has all the nutrients I needed to stand the day and keep me healthy yet each is in right amount. I wouldn't be needing much of an advice from my personal trainer.
