Apple Oat & Pecan Morning Muffins

It's no surprise that we love cooking in the muffin tin. Who has time to make a gourmet breakfast in the morning? We don't and love the convenience of the grab n' go style muffin! Today we are mixing things up and creating a healthy breakfast muffin in the form of apple pie! Can you beat this?
We start off by chopping up juicy golden delicious apples. We then saute up the apples with cinnamon, just a teaspoon of brown sugar and applesauce. Applesauce is one of our favorite skinny substitutions when it comes to baking! You can eliminate most, if not ALL, of the sugar you need with this little trick ;)
To make these muffins you will simply pour the wet ingredients consisting of Apple Cinnamon Greek yogurt, skim milk, egg white, and vanilla extract over your dry ingredients. The dry ingredients consist of the apples, pecans for a boost of energy, baking powder, brown sugar and cinnamon. These muffins are super simple to make and packed with nutrition!
These healthy and delicious muffins come in at only 96 calories a pop! It's so important to start your day off with the right kind of energy to motivate you to continue on throughout the day :)

Carbs: 14.4 grams

Ingredients
1 & 1/2 cup dry oats
2 golden delicious apples peeled
1/2 cup applesauce
1 Greek yogurt (apple & cinnamon)
1 cup skim milk
1 egg white
1/4 cup chopped pecans
1 tsp cinnamon + a touch for sprinkle on top
1/2 tsp vanilla extract
1 tsp brown sugar
1 tsp baking powder
Let's get cooking!
1. Preheat oven to 400 degrees
2. Spray saute pan with non-stick pam spray. Add chopped apples, cinnamon and brown sugar. Saute on medium heat for approx 3 minutes or until apples begin to soften. Add applesauce to pan, mix together and cook for an additional 3 minutes. Take off heat
3. Mix dry ingredients together into bowl. Mix oats, warm apple combo, baking powder, and pecans
4. Whisk together wet ingredients consisting of greek yogurt, milk, vanilla extract, and egg white
5. Either spray muffin tin with non-stick spray or use muffin liners. Add one tbsp of wet ingredients to the bottom of each tin. Then fill each tin with the dry oatmeal mixture.
6. Once the oatmeal is portioned out, pour the remaining wet ingredients over top all muffins. Stir each individual muffin to make sure all oats are saturated
7. Bake muffins for approx 30 minutes or until knife is pierced through the center and comes out clean
Serves 12 healthy muffins! Enjoy :)
