Balsamic & Pineapple Glazed Sweet Potatoes & Carrots

Can you believe it's already Easter? It really seemed to sneak up on us this year! One of our favorite Easter traditions is to serve up a ham and pineapple. This year we wanted to create the perfect healthy side dish to compliment these yummy flavors! This is what we came up with, and boy was this a sweet and delicious dish. We decided to put a little spin on the ever popular sweet potato casserole. Sweet potato casserole's are typically packed with butter, cream and lots of sugar. You know by now you won't find any of those items on our ingredient list ;)
We skinnied this dish down by using half sweet potatoes and half carrot sticks. Roasted carrots are just as sweet and by subbing out half of our potatoes we cut the calorie count drastically! We made a quick and easy glaze to flavor up our potato and carrot combination. We simply tossed balsamic vinegar, fresh pineapple, garlic and olive oil in the food processor and blended away! This is a really tasty glaze and would be a wonderful glaze for any protein in the future :)
That's all there is to it! Simply pour the glaze all over the potatoes and carrots and bake to a golden brown perfection. This is a super easy dish to prepare, which is wonderful as it allows plenty of time to prepare the rest of your meal!

Nutrition Facts Per Serving
Serves 4
Calories: 193
Fat: 3.9 grams
Carbs: 38.7 grams
Dietary fiber: 7.0 grams
Protein: 2.5 grams
Ingredients
2 large sweet potatoes
1 pound carrot sticks
1 red onion
1/2 cup balsamic vinegar
1 cup fresh pineapple chunks
3 garlic cloves minced
1 tbsp olive oil
Freshly ground pepper
Let's get cooking!
1. Preheat oven to 425 degrees
2. Chop up carrots and sweet potatoes into thin 'fry-like' strips. Thinly slice red onion. Toss 3 ingredients into baking dish
3. Toss balsamic, pineapple, garlic and olive oil into food processor (or blender) and blend until smooth
4. Pour glaze over ingredients in baking dish. Toss to evenly distribute glaze over all ingredients. Add freshly ground pepper to dish and stir
5. Bake in oven for approx one hour. Toss every 15 minutes to distribute glaze
Serves 4 healthy portions!
