Pistachio & Cranberry Pesto Stuffed Chicken

WOW... this just might be our new favorite pesto! It had the perfect combination of salty and sweet flavors without adding any extra salt or sugar. Yep.. we were pretty impressed too ;) The saltiness and sweetness came only from the pistachios and dried cranberries. We simply tossed the two in the food processor along with fresh cilantro, garlic, nutty parmesan cheese and freshly squeezed lime juice. This was so good, you could actually eat it by the spoonful :)
Look at those colors and yes, we may be guilty of eating that bite! The next step is to simply stuff the chicken breast. We cut our chicken lengthwise and stuffed, stuffed, stuffed away! Easy enough and super healthy. We sauteed our chicken on each side to a golden brown and then just shoved the chicken, pan and all, into the oven to finish baking to a juicy center. We find this method works well when we stuff any meat!
We love to flavor up lean chicken breasts with a simple pesto sauce. We keep the carbs down, but certainly not the flavor! Hope you enjoy this one as much as we did :)

Pistachio & Cranberry Pesto Stuffed Chicken
Olive oil
1 pound chicken breast - 4 breasts
1 cup shelled pistachio nuts
1/2 cup dried cranberries
2 garlic clove
3 tbsp freshly grated parmesan cheese
2 lime
1 large handful fresh cilantro
Let's get cooking!
1. Preheat oven to 350 degrees
2. To make pesto combine nuts, cranberries, garlic, parmesan cheese, cilantro, 2 tbsp olive oil and the juice from both limes into the food processor and blend until smooth
3. Slice chicken lengthwise and stuff each breast with approx 2 tbsp of pesto sauce. Rub outsides of each chicken breast with leftover pesto sauce
4. Place stuffed chicken breast in pan with one tbsp olive oil and saute each side for approx 3 minutes. Pop the entire pan into the oven for another 10 minutes or until chicken is cooked throughout. Chicken should be moist and white throughout.
5. Slice up and serve
