Steak Fajita Lettuce Wraps

Doesn't everything taste better in a lettuce wrap? One of our favorite skinny substitutions is swapping out bread for a cool, crunchy lettuce wrap!
Tonight we're having steak fajitas! Our version doubles up the veggies, holds the tortilla (& the calories) and adds a creamy avocado topping. You can certainly make these with chicken or shrimp but we like to keep the hubs happy & make steak every once in a while. And this recipe is a guilt free way to indulge!
When having steak, just make sure to get a lean cut of meat and trim away any visible fat to cut the calories and keep it as healthy as possible.
And with all the calories you'll save by cutting out the tortilla, feel free to pair this one with a refreshing margarita :) As always, just double check the calorie count in your favorite brand. We love a Skinnygirl Margarita which only has 110 calories per serving!

Ingredients
1 pound lean cut steak
4 bell peppers (green, red, orange & yellow)
1 red onion
3 garlic cloves depending on size
1 tbsp chili powder
1 tbsp cumin
Pinch of cayenne
Juice & zest of 1 lime
Handful of cilantro
Salt & pepper
1 head of leaf lettuce
Guacamole Topping Ingredients
1 avocado
1 vine ripe tomato
1 tsp chopped white onion
Small handful of cilantro
Lime wedge
Pinch of salt
Let's get cooking!
1. Slice steak into thin strips and season with salt & pepper. Sauté up until browned evenly. Remove from pan and set aside.
2. Thinly slice the bell peppers, red onion and finely chop garlic cloves. Sauté in 1 tbsp extra virgin olive oil.
3. Add steak to pan with peppers. Season with zest & juice of one lime, cumin, chili powder, cayenne pepper & a handful of cilantro. Stir to combine.
4. Mix together the guacamole topping by combining avocado, chopped tomato, chopped white onion, juice of one lime wedge, cilantro and a pinch of salt.
5. Fill lettuce leaf with steak filling and and a spoonful of guacamole topping. Enjoy :)
Serves 4 healthy portions!
