Grilled Shrimp Salsa Lettuce Wraps

What's better than biting into a cool and crunchy lettuce wrap?  In our opinions not too much!  We feel so good about eating fresh ingredients wrapped in fresh ingredients, and why shouldn't we?  This meal has so many layers of flavors and couldn't be simpler to make.  We start by grilling shrimp (we used a grill pan) with chopped cilantro, garlic and freshly squeezed lime juice. 

Moving on to our amazing salsa.  We simply chop up avocado, cucumber, red onion, red pepper, jalapeno, and cherry tomatoes and then season it with garlic, cilantro, and fresh lime juice!  Chop up your warm grilled shrimp and toss them all right into your salsa!  This would also be a great salsa to entertain with and would definitely impress all your friends.  You know by now we love a good salsa ;)



Tonight we turned this into a wonderful and healthy meal!  We simply wrap up our shrimp salsa into a fresh lettuce leaf.  Let's just think here... we are eating low carb, low calorie, and high protein... what more could you ask for?  Oh wait, they're delicious ;)

Shrimp Salsa Lettuce Wraps
1 lb shrimp (cleaned and devained to make it easier)
Olive oil
5 garlic cloves
1/4 red onion
1 pint cherry tomatoes
1 cucumber
1 red pepper
1 jalapeno
1 avocado
1 handful fresh cilantro
1 lime
lettuce for wraps - we used boston lettuce

Let's get cooking!
1.  Wash and peel your shrimp.  Remove the tail.  Chop cilantro, 2 garlic cloves and toss in grill pan.  Add one tbs olive oil and place shrimp on grill pan.  Squeeze juice of 1/2 lime on shrimp while cooking.  Cook for approx 3 minutes per side.  Shrimp will be pink when fully cooked.  (We kept on longer as we like them more well done)  Use your judgement here!
2.   To make salsa halve your cherry tomatoes.  Mince the remaining garlic and jalapeño. Chop red pepper and cucumber into similar sized small chunks.  Cube your avocado into chunks and mix all ingredients together.  Squeeze the juice from the remaining 1/2 lime over the salsa.  Chop up remaining fresh cilantro and mix through.
3.  Cut fully cooked shrimp in half and mix into salsa. 
4.  Wrap in lettuce leaf and enjoy

Serves 4 healthy portions!
