Stuffed Butternut Squash with Quinoa, Apples & Cranberry 'Stuffing'

From our skinny table to yours...
We don't know about you but the holiday season is our favorite time of year and all of the yummy food is a big part of that!  MMM stuffing... one of our all time favorites, but of course packed with fat and calories, making this not an everyday meal... or so we thought!  With our new twist on 'stuffing' feel free to indulge any night of the week!  We thought the sweet filling of the buttery squash would pair perfectly with hot turkey sausage, but you know us, we always cut our meat portion in half, and quinoa blends so nicely with ground meat of any kind!  We roasted up the butternut squash, scooped out the savory filling and mixed in a combination of quinoa, hot turkey sausage, garlic, onions, apples and cranberries.. YUM!

So the picture below does not do this meal any justice!  Needless to say it's not a great shot ;) but we promise the taste will blow you away!  We hope you enjoy this yummy dish which is sure to satisfy any 'stuffing' craving and hopefully become a new favorite in your household as well!


Stuffed Butternut Squash with Quinoa, Apples & Cranberry 'Stuffing'
Ingredients
Olive oil
1 butternut squash
3 cloves garlic
1 small yellow onion
1/4 pound hot turkey sausage (2 links)
1 cup dry quinoa
1 large apple (we used golden delicious)
1 handful fresh cranberries (dried would work nicely too)
2 large carrots
2 celery stalks

Let's get cooking!
1. Cut butternut squash in half lengthwise and roast face down in the oven for 25 minutes at 400 degrees or until the flesh is tender.
2. While squash is roasting, cook quinoa according to package. 
3. Chop up garlic, onions, carrots, celery, cranberries & apples.  Saute in olive oil until flavors combine and nice and tender.  Add in turkey sausage and cook until browned.  Add cooked quinoa to the mix.
4. Take squash out of oven and scoop out flesh when tender.  Add the squash to the 'stuffing' mix and stir.  Scoop 'stuffing' back into butternut squash shell and place back in oven and roast for an additional 10 minutes until begins to brown!
