Crab stuffed Avocados

We are suckers for a pretty presentation and this one takes the cake. We truly believe you eat with your eyes first & our crab stuffed avocados taste as good as they look!
This meal was inspired by two of our favorite foods ... avocados & crab meat, yummmm!
This is the perfect meal to entertain with as its almost embarrassingly easy to make :) And talk about easy clean up! There are no pots and pans at all! Simply mix up the crab meat with a bit of lemon & cilantro then mix together our guacamole and plate up.
When eating crab meat straight, we always splurge and buy jumbo lump crab meat. And with 8oz making two portions (don't worry, it still left the hubs full & satisfied!), it's a surprisingly affordable way to indulge!

Ingredients
8 oz of jumbo lump crab meat (will make 2 dinner portions or 4 appetizers)
2 ripe avocados (1 per person for dinner)
1/4 white onion
1 vine ripe tomato
Juice of 1/4 lime
Juice of 1/4 lemon
Cilantro
Salt
Let's get cooking!
1. Gently finger through the crab meat to ensure there are no bits of shell!
2. Mix together crab meat, juice of 1/4 lemon, and a small handful of chopped cilantro.
3. Scoop out avocados and save the empty shells for presentation.
4. Combine avocado, 1/4 chopped white onion, 1 chopped vine ripe tomato, juice of 1/4 lime, small handful of cilantro & a pinch of salt.
5. Stuff each empty avocado half with 1/4 of the avocado mixture & top with a 1/4 of the crab salad. Enjoy :)
Each healthy dinner serving is 2 stuffed halves!
Or feel free to splurge with a small handful of whole wheat tortilla chips to make this the perfect game day snack :)
