Turkey Sausage, sweet potato and red pepper sandwiches

It's the weekend so here's an easy one for you with barely any clean up! We like to make our husbands think they are getting a 'cheat meal' weekly, and this one certainly has the flavor to fool ;) You can't go wrong when it comes to men and sandwiches and our take on the classic sausage sandwich is a winner! Swap out the red meat with turkey sausage, add in nutritious sweet potatoes and of course veggies and you have yourself a complete meal all in one simple dish. This is a hit in our households and we're sure it will be in yours!
You can certainly swap out veggies or add more! We found that butternut squash is a good addition alongside the sweet potatoes.
Turkey sausage, peppers and onions
Ingredients:1 pound turkey sausage
2 red peppers
2 yellow onions
2 sweet potatoes
5-6 garlic cloves
olive oil
rolls - we always go with whole wheat
You won't believe how simple and delicious..
1. Preheat oven to 400 degrees
2. Slice up peppers and onions, chop sweet potatoes into bite size pieces and mince up the garlic cloves. Add veggies and garlic to the pan and toss with olive oil
3. Chop the sausage and saute in pan in a small amount of olive oil until the outside is golden brown (this will eliminate cooking time and keep outside crispy), when browned add the sausage to the pan as well. Mix around to combine flavors
4. Cook in oven for approx an hour, be sure to mix veggies and meat around every 20 minutes or so to keep from burning
5. Load up sandwiches on bread of your choice, and enjoy!!
