Chicken Bruschetta

Bruschetta, one of our all time favorite appetizers! It's so delicious we would gladly pile on two portions and be happy to skip the entree all together! And why not? Unfortunately, most restaurant bruschetta is packed with fat and calories ... think massive portion of garlic bread with a few tomatoes and lots of cheese on top!
But no worries, our version turns this delicious appetizer into a hearty bruschetta salad with tomatoes and roasted red peppers, grilled chicken breast for protein and a couple crispy garlic toasts for crunch.
So get ready because your favorite appetizer is about to become your favorite new entree!
Ingredients
1 pound chicken breast
12 vine ripe tomatoes (3 per person)
2 red bell peppers (we roast our own but feel free to use jarred peppers!)
1 handful of fresh basil
1/2 small red onion
4 garlic cloves
Balsamic Vinegar
Olive Oil
Fresh parmigiana cheese
1/2 loaf of whole wheat baguette
Let's get cooking!
1. Heat oven to broil. Place peppers on baking tray and top with olive oil. Roast peppers in oven for 20 minutes turning half way through.
2. Peel peppers and chop into thin strips.
3. Chop tomatoes into a fine dice and place in a bowl with the roasted red peppers.
4. Chop 3 garlic cloves, onion & basil and mix into tomatoes.
5. Season the tomatoes with salt & pepper. Toss with a splash of vinegar and olive oil and mix in a tbsp of fresh parmigiana. Refrigerate to marinate.
6. Cut chicken into bite sized pieces and season with salt & pepper. Add to a grill pan over medium-high heat. When chicken is almost cooked through, add a splash of balsamic vinegar to the pan and stir the chicken until finished cooking.
7. Once cooked add the chicken to the tomato mixture.
8. Cut bread into thin slices.
9. Heat 1 tbsp of olive oil with the remaining garlic clove in the microwave for 30 seconds to flavor the oil. Spoon the garlic oil onto the bread and broil until crisp!
10. Dish the bruschetta into 4 portions and top with 3 thin bread crisp and enjoy :)
