7 Layer Mexican Salad with Mango Vinaigrette

We LOVE Mexican food but don't like the typical calorie count that comes along with it. Trade in the sour cream, fried tortillas, and heavy cheese sauces for our 7 Layer Mexican Salad sure to satisfy all your Mexican cravings. It's packed with veggies and topped with a fruity homemade mango vinaigrette that is rich, creamy and sweet thanks to fresh mango and orange juice.
This has become a staple in our household even getting a weekly request from the hubs! Hope you enjoy as much as we do!
Ingredients
1 family size container lettuce (we use half baby spinach/half mixed greens)
1/2 pound of chicken breast
6 medium tomatoes
1 bunch of cilantro
1 bag frozen corn
Low-fat Mexican cheese
2 avocados
White onion
Lime
Cumin
Garlic Powder
Onion Powder
Splash of orange juice
Small handful of whole grain tortilla chips
Vinaigrette
1 Mango
1/3 cup orange juice
1/4 cup rice wine vinegar
1/4 olive oil
1 tsp brown sugar
Juice of one lime
Small handful of cilantro
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper
Let's get cooking!
1. Cut the chicken breast into bite size pieces. Coat with salt, pepper, cumin, garlic powder, onion powder and a splash of OJ and grill it up! (we use a grill pan and leave the grilling to the hubs!)
2. Finely chop the tomatoes (set aside about 1 tbsp worth to add to the guacamole topping) and add a touch of lime juice and cilantro for a quick salsa.
3. Scoop out both avocados and give a quick mash. Add salt, 1/4 of the white onion finely chopped, remaining tomatoes, juice of 1/2 lime, cilantro.
4. Once the chicken is grilled remove from pan and set aside. Add the frozen corn kernels to the pan and grill about 2/3 minutes until slightly browned.
5. For the vinaigrette, cut the mango into a quick dice and add to the blender. Add the remaining ingredients and blend until smooth!
6. To arrange the salad, create a bed of lettuce and add each ingredient rainbow style across the lettuce starting the tomatoes, corn, cheese and chicken. Top each salad with a few crushed tortilla chips and a small scoop of guacamole.
7. Dress and enjoy!
